Apple Dumplings

(Quick, easy, and soooooooo delicious!! One of the best desserts ever!)

2 whole Granny Smith apples

2- 8 oz. cans of crescent rolls

2 sticks butter

1 1/2 c. sugar

1 t. vanilla

cinnamon, to taste

1 can (12 oz.) Sprite (The recipe really calls for Mtn Dew, but I made it with Sprite and it tastes the same. Plus, no caffeine.)

Peel and core apples. Cut each apple into 8 slices. Roll each apple slice in a crescent roll. Place in a 9 X 13 buttered pan. Melt butter then add sugar and stir. Add vanilla, stir and poor entire mixture over apples. Poor Sprite around edges of pan. Sprinkle cinnamon and bake @ 350 for 40 min. Serve with ice cream and spoon some of the sweet sauces from the pan over the top.

SUMMER BREAK, BABY!!!!!

I just finished a blissful week of spring break. Ahhhh..... It's been so nice to relax, get stuff done, and spend time with the fam. Last Sunday, I traveled home to see Baby Brett blessed. (He is such a sweet little thing. I loved holding him and smelling him - yes, smelling him.) I crashed at mom and dad's for a couple of days. They love having me home, I just know it. Then I came back up to Eagle Mountain to spend time with my Matty. I was also able to get my teeth cleaned, vacuum out my car, get some work done at my school, go to the temple, and ride my bike. Now it's back to the grind stone.

34 more days. I can do it!

Eggs-treme FUN!

During the priesthood session of General Conference, Matt's mom, aunt, sister, 2 sisters-in-law, and I made sugar Easter eggs. It was a lot of fun. Matt's mom and aunt had already made the shells out of sugar and egg whites. We created an Easter scene inside the egg and decorated the outside.

I love General Conference. It's WONDERFUL to hear the Lord's prophet and apostles speak and to feel the Spirit bear witness of their words. The gospel is soooo good!

On Friday, Matt's brother's family gave Matt and me a surprise night out at "The Anderson Family Restaurant!" We were promptly picked up at 6:30pm and taken to Matt's brother's home. Matt's 3 nieces and 2 nephews welcomed us to a make-shift restaurant. We were seated, waited upon, served, and a funny lip-synced song capped off the evening. Matt has such cute nieces and nephews! It was so funny to see them peek under the curtain that separated the kitchen from the 'restaurant' and pretend to be professional hostesses, waitresses, and performers.
