Happy Turkey Day!

Tom here hopes everyone had a delightful Thanksgiving.

 We drove to Uncle Ryan and Aunt Misti's home in Eagle Mountain.

 Sat down for a finger-lickin' good meal.

And spent time with family.

Rubber Ducky, You're the One...


Gavin pretty much LOVES his rubber duckies.  
His dramatic play in the tub usually goes like this:

Little Duck:  "Oh, no!  Mommy!"
to which Mommy Duck swims on over and gives Little Duck a kiss.

Yummy to my Tummy


Creamy Chicken Enchiladas

8 uncoiled flour tortillas
2 chicken breasts, cooked and shredded
16 oz shredded Monterey Jack cheese
1 can Hatch’s brand green chile enchilada sauce
¼-1/2 c. cream

Cook tortillas and fill with some chicken and cheese and roll up.  Put in a greased 9X13 pan, seam side down.  Repeat with all 8.  Mix the can of sauce with the cream and pour over enchiladas.  Sprinkle more cheese on top and bake @ 350 degrees for 30 min covered and then take off and cook for an additional 5-10 min or until cheese is melted.

Serve with avacados, sour cream, tomatoes, lettuce, olives, etc.

Something Even Better than Pumpkin Pie!




Pumpkin Pie Cake

1 yellow cake mix (reserve 1 cup)
½ c. melted butter/margarine
1 egg

1 large can pumpkin
1 13 oz can evaporated milk
2 eggs
1 ½ c. sugar
1 t salt
1 t cinnamon
1 t ginger

reserved cake mix
¼ c. sugar
3 T flour
¼ c. softened butter

Mix cake mix, melted butter and 1 egg.  Press into lightly greased 9X13 pan.  Mix pumpkin, evaporated milk, 2 eggs, sugar, salt, spices.  Pour over crust.  Mix remaining 4 ingredients until crumbly.  Sprinkle over pumpkin mixture. Bake @ 350 degrees for 60 minutes.  Cool and serve with whip topping.

Now that I'm done watching all the episodes of this 3 1/2 season series, I feel as if I've experienced the death of a loved one!  I've gone through the grieving stages, and now I'm not sure what to do with myself...  Perhaps watch episode 1 again?!?!

All Hallow's Eve 2013

Cindy Lou Who, The Grinch, and Max

 (Only 50 more days 'til Christmas!)

This year for Halloween, we attended our ward's Halloween dinner on the 30th then took Gavin to Matt's work to trick or treat the next day.  The PSD (Publishing Services Department) did an awesome job decorating their cubicles so children of employees could trick or treat there.  We opted not to take Gavin out later that evening b/c Matt had class and Gavin was quite liking answering the door to trick or treaters.  Every time they knocked on our door, Gavin would run over to it, peek through the side window and wave to the trick or treaters while I grabbed the candy bowl.

At the end of the trick or treat path, they had cookies and a movie playing.
