February FUN

GUNG HAY FAT CHOY!
February 6th was the year of the pig.  We celebrated Chinese style by making paper lanterns for FHE then having a nice meal of rice, sweet/sour chicken, orange chicken, and Jeannie Inouye's won tons.  I was fried out by the end of that meal!  (Literally!)

Jeannie Inouye's Won Ton Recipe

1 pound won ton skins (found in the produce department)
1 pound ground beef or pork
1 green onion, finely chopped
1 can water chestnuts, finely chopped
3/4 c. grated carrots
1 T soy sauce
1 t salt
1/4 t garlic salt
dash of pepper and seasoned salt

Mix all ingredients, but won ton skins.  Put a teaspoon of mixture in won ton skin and fold like a triangle.  Fry in hot oil until light brown.  Drain on paper towels.  Serve with sweet n sour sauce.

Sweet and Sour Sauce Recipe:
1 c. sugar
1 t. soy sauce
1/3 c. vinegar
dash of salt
1/4 c. pineapple juice
4 T ketchup

Stir all together in sauce pan.  Boil 1 minute.  Put in a cup: 1-2 T cornstarch with a little bit of water.  Then pour into mixture and boil til thickened.  If you want sweeter, add more sugar; sour, add more vinegar.


We have been receiving snow storm after snow storm this winter.  The mountains have sufficient snow pack (which is a huge blessing), and we've been dying for sun, but realize that we are experiencing a typical winter and are grateful for the cold/snow.  Gavin does his "Chicken Chores" every day after school.  He wanted me to take a picture of the ice that he got off the hen house.

So what's something we can do during these cold months?  Go bowling, of course!  This was Laynie's first time, and as you can tell, she enjoyed herself.

Our Sweet, beautiful VALENTINES.  Matt gave the kids a huge box of chocolates.  And guess who's been eating most of it??  (Yes.  Me.  Even though I'm supposed to be on a sugar diet!)

Laynie was excited to go to her Valentines party at pre-k.  She refused to wear the antennae though.  Lol.
