For the past 2 months, our household has constantly had some form of illness affecting one of its inhabitants. We've had sinus infections, intestinal infections, common colds, (Does teething count as an illness?) more sinus infections, and now strep throat. I'm so sick of the SICK! Pretty sure I'm on the inactive records at church too. :) I don't think I'll be able to mentally handle another physical illness... HELP!!!
P.S. "S.O.S." stands for "Sick Of Sickness" :)
P.S.S. As of 2/27, brochiolitis can officially be added to the list... :(

Will You Be My Valentine?
Gavin and I woke up on Valentine's Day to find our valentines from Matt. Gavin was super cute when he mimicked my excitement/surprise. Daddy left Gavin a little box of chocolates and some flowers for me.
I had secretly packed Matt a "Love Lunch" by putting little love notes on each item that I had packed in his lunch box. For example, his apple read, "You're the apple of my eye." and on that package of peanuts, "I'm NUTS about you!" Then we had our traditional meatloaf dinner and afterward, country dancing. Gavin loved the meal (He was totally wolfing it down!) and he was all smiles as he danced in between Mommy and Daddy. :)
This Meatloaf is the BEST. One taste of it, and you'll want to have it every Valentines Day too.
Easy Pleasin' Meatloaf
(makes 8 servings)
2 lb lean ground beef (I use ground turkey and it tastes just the same or even better.)
1 package (6 oz) Stove Top Stuffing mix for chicken (or turkey)
1 cup water
2 eggs, beaten
1/2 cup BBQ sauce, divided
Heat oven to 375. Mix all ingredients except 1/4 cup BBQ sauce. Shape meat mixture into oval loaf in 9X13 baking dish. (I don't shape it like a loaf, I just pack it into the 9X13.) Top with remaining BBQ sauce. Bake 45 minutes to 1 hour.
